4 Quick & Easy Healthy Breakfast Ideas

Whether your school is starting back in person or you just want to savor some extra minutes in bed, having a few quick and easy recipes under your belt is always a good idea! Here are four of my tried and true favorites that are not only healthy but can easily be made to adapt to a few different dietary restrictions (ex. gluten free, paleo, dairy-free, etc)!

Banana Pancakes

These are super easy to make ahead the night before or even the morning of and are a great sweet way to start your day.

Cookware Needed:

Blender (ex. Nutribullet)

Ingredients:

1 banana

1 egg

⅓ cup oats

⅓ cup gf or regular flour

⅔ cup milk of choice (I use oat milk)

½ tsp baking powder

cinnamon

vanilla extract

Steps:

  1. add all ingredients except the baking powder to nutribullet & blend

  2. Add the baking powder and pulse quickly until mixed through (don't over mix)

  3. *optional* fold in blueberries or chocolate chips (personally, I don’t like to add much in but my family likes it when I do)

  4. cook on greased skillet, flip when bubbles form

  5. top w fruit + syrup

Cinnamon Banana Oatmeal

Cookware Needed:

Saucepan

Ingredients:

½ cup rolled oats

1 cup oat milk

1 mashed banana

Cinnamon (to taste)

Steps:

  1. Mix ingredients in a pot and cook over medium heat for 5 minutes

  2. Pour into serving bowl and top w sliced banana and more cinnamon

Breakfast Parfait

Cookware Needed:

None

Ingredients:

1 cup (5 ish oz) plain or vanilla yogurt (a lot of people use Greek Yogurt but I prefer coconut based yogurt)

1/4 cup strawberries

1/4 cup raspberries

1/4 cup blueberries

0.5-1 cups granola 

Steps:

  1. Layer a bit of mixed berries in the bottom of the cup 

  2. Spoon about 1/4 or 1/3 cup of yogurt on top of the berries  

  3. Repeat this layering until the cup is as full as you would like (yogurt should be the final top layer)

  4. If you’re eating right away, top with some granola

  5. If you’re preparing for the next day, fill up a small ziploc bag with the granola and seal to add in the morning

  6. Then, cover your cup tightly with a plastic wrap and seal with a rubber band 


Avocado Toast + Scrambled Eggs

Cookware Needed:

Non-stick Skillet

Toaster

Ingredients:

Scrambled Eggs:

  • 1-2 Eggs

  • Butter

  • Salt + Pepper

Toasted Bread

1/2 or 1 Avocado

*optional - Everything But the Bagel Seasoning, Red Pepper Flakes, Etc.

Steps:

  1. To make in advance, simply scramble your eggs the night before and store in the fridge

  2. Cook your eggs (or reheat if you’re using premade) and season w pepper and salt as desired

  3. While you toast two pieces of bread, cut open an avocado and mash with a fork onto your bread once they’re ready

  4. Add the eggs on top!

  5. *optional* add more seasoning like red pepper flakes or Everything But the Bagel Seasoning
